[Tsukudani real pepper]

Since it is freeze-dried it can be saved for a long period of time.


● material
Kyoto-producing real pepper 500g

(frozen to be thawed in the refrigerator the day before use)


· Sake 400cc
Soy sauce 60cc

● Directions

1. Blanch raw real pepper in boiling water. Put in a pot with sake and soy sauce, simmer over medium to low heat until the broth has settled.

※ It is common in Kyoto to not over boil in order to leave the aroma and            spiciness.


[Crepe pepper]

· Chirimenjako 100g
· Sake 100cc
Soy sauce 50cc
Kyoto-producing real pepper tablespoon 1-2

 ● How to make

1. put Chirimenjako, sake and soy sauce in a pan. Cook over medium heat, until the shiruki is reduced to about 80%.

2. Add pepper to complete once there is no juice remaining.

※ Extra pepper and mirin may be added to taste.

Japanese pepper is a well sought out seasoning with a refreshing scent and Piriri.
